Below is the schedule for our cupping sessions, featuring regional coffees from the talented producers we collaborate with. We will also showcase exotic varieties and innovative processing techniques from Finca Santa Barbara and Finca Juan Martin—our experimental farms developed alongside Area 18, our research department. These coffees highlight advanced processing techniques designed to maximize the potential of every cherry. We utilize a color sorter machine during cherry selection for optimum ripeness and consistency, bioreactors to stream real-time data for precise fermentation control, and drying chambers to strictly monitor temperature, relative humidity, and drying time. This data helps us make informed decisions to develop unique and innovative flavor profiles.
